How to Thaw Your Beef

The safest way to defrost beef is to place it on a tray (to catch any juices) in the refrigerator the day before needed and it let it thaw overnight.

Roasts require longer to defrost: for large roasts, allow 4 to 7 hours per pound; smaller roasts, 3 to 5 hours per pound. Never defrost meats at room temperature.
